Really love this intimate look at a small, independently run slaughterhouse in upstate New York. Food is the most important and, quite possibly, most complicated system on the planet. And, no matter the cuisine or the environment or the end result, you (omnivores, anyway) can trace it to this step and it’s important that it’s a step taken with care and reverence.

PETA Suggests a Name Change for the Tenderloin
In a letter to Mayor Edwin M. Lee sent Tuesday, Tracy Reiman, the group’s executive vice president, suggested that city officials rename the neighborhood the Tempeh District, a homage to a soy-based meat substitute.
I really thought this was a story on The Onion but, alas, it is just a publicity stunt.
